Smoothies solve problems. From picky eaters who turn their noses at raw vegetables to adults craving a sugary milkshake, a smoothie can offer a satisfying, nutrition-packed meal or offer a delicious way to curb sugar cravings. And we'll admit it without shame, we have fallen down the smoothie recipe rabbit hole on Pinterest on more than one occasion.

Have you jumped on the smoothie bandwagon yet? For newbies or seasoned smooth(ie) operators, this Paleo Avocado Spinach Smoothie recipe is easy to make and packed full of veggies, protein and good fats (such as energy producing medium-chain triglycerides) including avocado and coconut milk.

Chia Seed Superfood

You may notice chia seeds and ground flax seeds in a lot of smoothie recipes. Why chia seeds? Chia seeds (salvia hispanica) have health benefits that still boggle our minds sometimes. These teeny tiny superfood seeds are packed with antioxidants (preventing cellular oxidation/fighting free radical damage), dietary fiber (they are also hydrophilic which means they absorb water and help with bowel regularity. TMI? Sorry…your colon health is important to us.) and Omega-3 fatty acids which protect your cardio health. #ChiaForTheWin

And with organic spinach, chia seeds and raw honey, you're packing in some superfood heavy hitters, right in line with the paleo diet and Whole30.  (If you want to make this a ketogenic-diet recipe, swap a bit of your favorite stevia for the honey and to make it vegan.)

Why Organic Spinach?

Well you might not know yet about how we feel about pesticides, but I think we can all agree that it's not something we want in our smoothies. In fact, spinach ranked #2 on the infamous 2018 Dirty Dozen List (by watchdog group the Environmental Working Group) of fruits and vegetables that are the MOST tainted with pesticide residue. 97% of all conventional (NON-organic) spinach contains pesticides. We love our leafy greens and it's important to always choose organic. We like our spinach like we like our brains, neurotoxin-free!

Ingredients

Instructions

  1. In a blender, combine the coconut milk, spinach, avocado, honey, lemon juice, protein powder and chia seeds (if using)
  2. Blend on high until smooth
  3. Add the ice cubes and blend well
  4. Pour it into glasses or a bowl for a morning smoothie bowl and serve immediately
  5. Dig in with a reusable straw, a paper straw, or a spoon AND enjoy!

 

Recipe Notes

  • We love this 4-star rated affordable high speed blender with glass jar. Perfect for making smoothies and packing them along in a lidded glass jar to soccer practice!
  • Because avocado oxidizes quickly, it's best consumed immediately. Although the fresh lemon slows its oxidation, it might darken a bit if stored for a short time, but it'll still be delicious and perfectly good to eat!
  • Your smoothie will turn out thinner if using a different milk in place of canned coconut milk. You can always reduce the amount of milk to maintain that trademark smoothie thickness. Not everyone loves the taste of coconut milk, so you could try out this recipe with our homemade cashew milk!
  • Any frozen fruit like frozen pineapple, bananas, mangoes or peaches can also be added to this smoothie. In that case, reduce the amount of sweetener and ice a little bit since the frozen fruit will serve to partially replace them. You will probably need to add a bit more milk so that the blender doesn't work too hard to process the frozen fruit.
  • Protein powder is optional. Some of our kids absolutely love it when we include a scoop or two of this delicious plant-based vanilla protein powder, but another one of our kids refuses it. Personally, we love it but in order to accommodate the whole family, we make a batch without, pour a glass and then add the protein in for the other serving.
